Iceland

Iceland had been on my mind a long time. We decided to take the trip together and after an early morning arrival, we checked in at the Hotel Fron. We first visited the Blue Lagoon, and after that never really recovered our energy. It was magical. I felt lucky. I felt present. I was joyful. It's a beautiful place. We slept through a lot of the Golden Circle Tour unfortunately, where we visited places like the Gullfoss Waterfall, Geysir area with geothermal museum, Pingvellir, and the Volcanic crater Kerio. Unfortunately no Northern Lights viewing this time so we were able to visit the Peace Tower which again was magical. It was as if we had our own island (for a brief moment until the school trip arrived) and what the tower symbolized was inspiring. Our last stop was the zoo.

We dined at Siggi Hall (Carlsberg!), Tapas, even Vegetarian at Anaestu Grosum, but my favorite was the Chef's Menu at the Seafood Cellar Restaurant, Sjavakallarinn, known for it's fusion seafood.

Suba's Beer Sangria

Suba, 109 Ludlow Street, serves up a tangy, Beer Sangria. I jotted down the recipe as lager (Sam Adams of course), triple sec, pear puree, lemon juice and fresh fruit. Food & Wine lists the origin of Roger Kugler's inspiration, a British customer's request for a shandy. Recipe below.

  • 2 Bartlett pears, peeled and chopped
  • 1 cup plus 2 tablespoons fresh lemon juice
  • Four 12-ounce bottles lager, chilled
  • 1 cup triple sec
  • Ice
  • 2 Bosc pears, sliced, for garnish
  1. In a food processor, combine the Bartlett pears with 2 tablespoons of the lemon juice and process to a puree.
  2. Slowly pour the beer into a pitcher. Stir in the remaining 1 cup of lemon juice, the triple sec and the pear puree. Fill pint glasses halfway with ice. Add the sangria and garnish with the Bosc pear slices.
